Yes, you can use your hostel address to open a Monzo account. You must have a valid form of ID to register with a Monzo account. You will need to make sure that you can have access to the post as your Monzo card will be sent via royal mail. 

It’s important to remember that once you have a fixed address to register this on your app as you may need another bank card in the future.
